When we think broadly about dietitians, we might imagine someone in a lab coat finalizing the calorie count on the side of a cereal box. But Amber Pankonin’s career looks a lot more modern and contains diverse and moving parts. She’s a content creator alongside being a licensed expert, employing food photography and branding skills to help food companies tell the stories of their recipes.
The Nebraska-based Pankonin has worked at gyms, hospitals, universities, and, now, for herself. Over time, she has migrated from the path of the clinical dietitian and toward a side of the career where she can exercise her communication skills more freely. In addition to running her own website and podcast, Pankonin typically manages the needs of several dozen clients at a time.
